In senior living, dining goes far beyond a meal. It supports comfort, wellness, routine, and daily enjoyment. At University Senior Living, we prioritize from-scratch cooking and source fresh ingredients each week. Our culinary team prepares meals that are flavorful, nutritious, and tailored to resident needs. From house-made soups and sauces to freshly prepared entrées and sides, we focus on visible, high-quality preparation. As Culinary Director, I see how fresh sourcing and scratch cooking improve health, satisfaction, and the overall daily experience.
In my kitchen, from-scratch cooking starts with basic, whole ingredients. We avoid relying on pre-made or heavily processed foods. This approach gives us greater control over quality, flavor, and nutrition.

Fresh ingredients support resident health. Whole foods contain more natural vitamins and minerals. They are also lower in sodium and preservatives. Cooking this way allows us to manage ingredients carefully and prepare meals that meet high standards.
I adjust recipes to meet senior-specific needs while honoring personal preferences. Nutrition and safety always come first. When needed, we modify textures to support easier chewing or swallowing. We also adjust seasoning to manage sodium and sugar without sacrificing flavor.
We balance comfort foods with lighter, wholesome options. Familiar favorites remain on the menu, but we prepare them in healthier ways. Pairing classic entrées with fresh vegetables and nutrient-rich sides supports overall wellness.
One resident favorite we prepare entirely from scratch is our scones. We use simple, high-quality ingredients:
All-purpose flour
Baking powder
Salt
Sugar
Cold unsalted butter, cubed
Milk or cream
Eggs
Scratch cooking requires time, skill, and attention to detail. That investment makes a difference. Freshly prepared meals support wellness, enhance satisfaction, and create a dining experience that feels personal and comforting.
At University Senior Living, our culinary team prepares each meal with intention. We take pride in using fresh ingredients and maintaining a strong commitment to quality. In senior living, food is more than nourishment. It is comfort, connection, and an essential part of feeling at home.
